During the craziness that was the creation of our of our new fall and winter teas and cocoas, three things collided and caused me to decide, “I MUST Make That Tea!”
The first thing laid the groundwork, one of those preparing the mind for an idea situations. Many of the teas we were creating were inspired by baked goods: Gingerbread, Snickerdoodles, Cinnamon Rolls. We have a particular method of going about making a tea blend remind you just enough of something baked, and I was in kind of a rhythm with it.
The second was that Mister Tea tasted my first attempt at a “standard” chai, made a face, and told me it wasn’t a basic chai, it was a cardamom chai. (My love for cardamom got away from me on that first test.) He didn’t think it was bad, per se, just not what we had been looking for.
The last thing was a tweet from a friend. She was making cookies. Lemon Cardamom cookies. They sounded amazing. However, I was blending teas that weekend, with a personally set deadline, and could not take time out to bake anything. To mollify myself, I created a tea with the flavour I imagined for her cookies.
When we settled to name it, a friend who also reads and watches ‘Game of Thrones’ pointed out an obvious tie-in. Sansa’s love for lemon cakes.
Now for the basics:
Organic Ingredients: Keemun Black Tea, Lemon Peel, Cardamom, Vanilla Powder
Batch Size: 3.3 ounces (approximately 30-35 cups of tea)
Options: Loose Tea (Bag, Tin), Single Serving Sachets
Cardamom can drop your blood sugar, so keep that in mind when drinking this tea.
