I have what might be called a bit of an obsession with chai. The particular spice combination makes me happy, and, as an added bonus, is really quite good for you.
Occasionally, when we create a ‘simply tasty’ tea, it sparks an idea for a chai that is similar, but has all the lovely spices.
‘Smoke in the Water’ was inspired by the discovery that elderberries work really well with stronger black teas. We’d known, from using them in medicinals, that the taste of the elderberries carries quite well, but the pairing with the darker teas was staggeringly good.
So, we upped the ante, using what is currently our darkest, smokiest black tea as the base, added a touch of vanilla, all the lovely spices, and elderberries – and had figured out the name before I’d finished blending the test batch.
I was not disappointed with our end result. Except for the issue of choosing which chai to pull from the tea cabinet. We have such an array now that you can become mildly mesmerised while trying to make a decision.
